Strawberry Ice


I used to make this as a child and recently returned to it. Make lots as it’s very addictive once you start eating!

You will need:
1lb (450g) strawberries, 1 pint (570ml) water, 3 tablespoons of lemon juice and 6oz (175g) of caster sugar.

Remove the green tops of the strawberries then wash all the berries when you have finished. Put the strawberries, water and lemon juice into a blender, I use a nutri-bullet, for a few seconds then add the sugar and whizz again. Put through a fine nylon sieve or muslin bag into a clean bowl. Once all the mixture has been sieved but into freezer containers, pop the lids on and put into the freezer for 2 hours.

After 2 hours take out and use a fork to mix everything together. The outside edges will be more frozen than the middle, mix it all together gently. Put back into the freezer for another 2 hours.

Repeat the previous step then return to the freezer for a further hour.

Take out and fork once more, then serve. Enjoy!
