My blueberries are growing really well this year so I’ve been looking for recipes on how to use them. I’ve come across these delicious looking blueberry waffles by blogger Deliciously Ella. Enjoy.
– 200g porridge oats, 2 cups
– 2 tablespoons chia seeds
– 3 tablespoons maple syrup
– 250ml almond milk, 1 cup
– 50g buckwheat flour (or plain white flour), 1/2 cup
– Handful of fresh blueberries, about 20g
– 1 tablespoon coconut oil, plus more for the waffle iron
